Beth Zabriskie Parker, our beloved mother, grandmother, great-grandmother, aunt, cousin, and friend, passed away peacefully on Saturday July 29, 2017, at her home in Springville, Utah. She is reunited with her husband and sweetheart, Norman Lee Parker. Beth was born November 15, 1926, in Provo, Utah, to John Irwin and Maud Lillian Daniels Zabriskie into a family of three brothers and two sisters.
She attended Provo High School and Brigham Young University, where she earned a degree in accounting. She participated in community and college activities with the Val Norn social group and was elected BYU Banyon Queen.
On September 2, 1947, she married Norman Lee Parker. They were sealed in the Provo LDS Temple. Beth and Norm built their life together in Springville where they happily welcomed to their home seven children, daughters and sons-in-law, Joan (Larry) Rawle, Susan Childs, Gayle (Doug) Bradford, Louise Parker, Dale Earl (Martina Cope) Parker, Kimber Lee (Dallen) Atack, and MaryAnn (Stuart) Nelson; 30 grandchildren, and 53 great grandchildren and numerous friends. Her chocolate chip cookie jar was a symbol of her love for each and every one of them. They, in turn loved her, and she has touched their lives greatly. She had a strong and loving testimony of the divinity of Jesus Christ, which she shared in love and service as a devoted member of the Church of Jesus Christ of Latter-Day-Saints.
